Years ago, K-Mart opened a store at Asher and University in Little Rock. Not sure of the year. Late 60's early 70's. My mother got a job there and helped stock the store. The store had a deli at the front and a cafeteria in the rear. The deli had the best subs I had ever eaten. I have found the ingredients and how they are put together.

Kmart Sub

1 sub roll
2 slices salami, with the embedded peppercorns
1 slice Oscar Mayer bologna
1 slice Oscar Mayer honey-roasted ham
1 slice Kraft American cheese
onion, sliced sliver thin
lettuce, shredded
tomatoes, sliced 1/8 inch thick
banana pepper, yellow sweet mild banana pepper rings
dill pickle, whole sliced sliver thin
French's yellow mustard

Slice all of your veg; dill pickle, tomato, lettuce and onion.

Layout your meats in a stack and slice them half. Slice your cheese in half.

Open the rolls without breaking the hinge of the bread. Squirt on the mustard in a V shape pattern across both the top and bottom bun.

TOP BUN: Place 4-6 pickle slivers on the top bun.

BOTTOM BUN: 4 salami halves. 2 bologna halves. 2 cheese slices. 2 ham halves. 4 tomato slices. Onion. Shredded lettuce. 4-8 pepper rings.

Carefully close the sandwich and wrap it tight in plastic wrap and allow to sit in the refrigerator, for at least 30 minutes.
Unwrap and serve!

It was great. Like I remembered them.

Your taking me back a long ways. I recall those days. Standing there looking up on my toes trying see those sandwichs. Then running over to matchbox cars. Which was not very far away. Then we would leave there an go over to Otasco across street.

Near the Kroger store in the Town and Country Shopping center. Across University was the Weingartens grocery store. And the Western Auto was on the other side of Asher in the Village shopping center. I haunted that area in my youth. Now, I avoid it like the plague.

Yeah it was Western Auto. I think salesman name was Chip.

That's a free fire combat zone these days from what I hear. Have not been there in over 30 years and ain't planning on going back.

My maternal Grandmother cooked in the Frankie's Cafeteria for many, many years. Whenever we were in Little Rock we'd go eat there, at what I called Ma maw's place. They tell me that when I was 5 or so we went there to eat, we'd just got in the front door and before anyone noticed or could catch me I shot past everyone and hit the kitchen to see my Ma maw Leslie. Didn't set too well with my Mom and Dad, but Ma Maw loved it and came out front carrying me. I'd been there lots of times before and knew where she'd be, so that's where I went.

I remember going to K-Mart in Russellville with my grandparents as a kid, every time I would have to get one of their cheeseburgers from the Café. I can remember it being one of the greasiest burgers ever but, man was it good!

My girlfriend worked at a plasma center near that intersection, University , Asher, Colonel Glenn.. I go through there a lot. To get to 36 street Boyle Park or the new Fishing hole off Western Hills. Or to get to a Taco Truck that parks at Colonel Gleen and 36th. Its not too bad down there but the Plasma/Blood center does attract a pretty unsaviory bunch of donators and they seem to hang around before and after donating. And then you got the dudes trying to sell something to the guys coming out of the center with 40 bucks in their hand. And some girls after selling their blood they still don't have enough money and want to sell something else :happy0035: well like twodog says I guess it is kinda bad down there. :poundfloor:

Almost forgot that sure is a nice looking sandwich I would buy it. can almost taste the peppers. Your right CF you got to wrap it tight and in the fridge for a bit to make it all work right :happy0035: to make it like store bought.

You don't want to leave it in the fridge too long. I made my wife 1 for her lunch at work. By the time lunch rolled around, it was a soggy mess. 30 minutes fridge time is sufficient.
